How to make it on the stove
Every family in India makes masala chai a little differently, so treat these measurements as a starting point. This is how we make ours.
- Bring 1 cup of water to a boil in a small saucepan.
- Add 1 tablespoon of Chai and let it boil hard for 2 minutes. The water will turn dark red.
- Add 1/2 cup of milk and 1 tablespoon of sugar. Bring it back to a boil, then simmer for 5 minutes. Stir, and keep an eye on it. Milk likes to climb.
- Strain it into your favorite mug and drink it while it's frothy.
Chai just means tea
In Hindi, chai is the word for tea. The spiced, milky cup most of us picture is masala chai, which means spiced tea. It comes from India, where every household makes it a little differently. Ours leans on ginger and cardamom.
