What is Green Tea?

Green tea is made from the same plant as black tea (Camellia sinensis), but the leaves are "fixed" (heated) immediately after harvesting to stop oxidation. This preserves their vibrant green color and fresh, grassy flavor profile. Because they are less processed, organic loose leaf green teas retain the highest concentration of antioxidants, particularly EGCG, which is famous for supporting metabolism and cellular health.

Explore Our Varieties

Green tea offers a wide spectrum of flavors depending on how it was processed. We offer the finest organic varieties:

  • Sencha (Steamed): Our classic style green tea. It offers a fresh, savory, "umami" flavor with notes of fresh grass and seaweed. It is the gold standard for a daily antioxidant boost.
  • Jasmine (Scented): We use real jasmine blossoms to scent the tea leaves naturally. This creates a sweet, aromatic cup without the use of artificial perfume sprays found in cheaper brands.
  • Genmaicha (Toasted): Known as "popcorn tea," this is a blend of green tea and toasted brown rice. It offers a warm, nutty, savory flavor that is comforting and lower in caffeine.

The Secret to Non-Bitter Green Tea

If you think green tea tastes bitter, the water was likely too hot! Green tea is delicate. Never use boiling water.

  • Temperature: 175°F to 180°F (let boiling water sit for 5 minutes before pouring).
  • Time: Steep for only 2 to 3 minutes.
  • Result: A sweet, smooth cup with no astringency.

Gentle Energy

Green tea provides a milder caffeine lift than black tea or coffee. It typically contains about 20-30mg of caffeine per cup (vs. 95mg in coffee). It is the perfect choice for a mid-afternoon "pick-me-up" that wakes up your brain without keeping you awake at night.

Why Organic Matters

Because green tea leaves are often unwashed to preserve their delicate oils, choosing Certified Organic is crucial. Conventional green teas can retain residue on the leaf surface. At Yerba Buena Tea Co., we source only organically grown leaves to ensure your cup is pure, safe, and delicious.

Your Questions About Green Teas, Answered.

Why do green teas need cooler water?

The delicate leaves of green tea are sensitive to high heat. Using boiling water can scorch them, releasing excess tannins and creating a bitter taste. Brewing at a lower temperature (around 175-180°F) preserves their natural sweetness and complex flavors.

Japanese vs. Chinese green teas?

It's all in the processing. Japanese teas are typically steamed for a fresher, grassy flavor (like our Sencha), while Chinese teas are often pan-fired for a toastier character (like our Gunpowder Green). Some, like Houjicha, are even roasted!

How much caffeine is in green tea?

Green tea generally has a low to medium caffeine content, less than black tea or coffee. It's also rich in an amino acid called L-theanine, which works with caffeine to promote a state of 'calm alertness,' making it ideal for focus without the jitters.
