We blend our Lapsang Souchong half and half with our Assam. The Lapsang is dried over pine wood fires in Fujian, China, and brings the campfire. The Assam brings the malt, and the body to stand up to milk. Then come the spices from our Chai: ginger, cardamom, cinnamon, clove, nutmeg and star anise. This blend contains caffeine.\u003c\/p\u003e\n\u003ch3\u003eWhy the smoke works\u003c\/h3\u003e\n\u003cp\u003eThe smoke comes from the leaf itself. Lapsang gets its character from leaves dried over real pine wood fires, so it tastes of wood and warmth and carries the spice without going harsh. The Assam keeps it in balance, so the cinnamon and ginger still come through.\u003c\/p\u003e\n\u003ch3\u003eThe Fireside Latte\u003c\/h3\u003e\n\u003cp\u003eSteep 1 tablespoon in a cup of just-boiled water for 5 minutes and stir in a little maple. Top it with warm, frothed oat or whole milk. The milk softens the smoke and brings the spice forward.
